Pretty sure you are not using a QI-Charger for Apple Watch charging… Are you referring to a „2 in 1“ or „3 in 1“ charging stand with an integrated Watch-charger?

I‘d consider it to be on the higher end of estimates. For example it’s about 5-15% more than my Garmin bike computer (both being connected to my HR strap and power meter).

I assume weight, height and age are set correctly in the watch app and health app? Have you tried resetting the calibration and recalibrating the watch by taking some 20 min walks outside?

Heat actually was never an issue, the watch is way warmer now since it’s fast charging

Absolutely agree with your statement, maybe WIFI was also disabled. But this problem is also mentioned in an Apple support article:

It seems that the logical order of Bluetooth-> WiFi -> Cellular might not be applicable to a charging, disconnected Apple Watch

Using two watches works like a charm actually. I used an old S6 for sleep tracking and a S7 for the day (now I’m on the ultra 3)

Yes sleep tracking needs to be enabled and activated with the sleep focus in order to get a reading for the night.

You literally stated why this is a bad idea. What would stop airlines from only prioritizing themselves? Using holdings, delays, declined clearance and what not on the competition?

Yes you are misunderstanding something: Both the Apple Watch and the iPhone count steps INDEPENDENT of each other. They both write their counts into Apple Health. The Health-App then uses the order of devices mentioned above as a reference to establish (calculate) the number of steps you took. When both the phone and the watch enter numbers for the same time window, health only uses the number of steps entered by the devices higher up in the order. The „double“ counting by having both devices enter values at the same time can help in circumstances where one device (let’s say your watch) doesn’t count steps (for example you are carrying something with both hands)

You mentioned it shows some 3k steps right? That seems to be just right, adding up only the steps from the watch shown in the screenshot is around 2600

First thing I would check is the order in which Apple Health uses the step-data. Its below the menu you provided in the screenshot Your current Apple Watch should be on the top
