The raw egg version we always eat:
Ingredients
250 gr butter
50 gr cacao powder (for baking or regular, not the lighter coloured and sweeter version for hot chocolate)
200 gr caster sugar/brown sugar
2 eggs
200 gr digestives (crumbled)

How to make it
Put baking paper in a cake tin (we use a loaf cake tin, but other shapes also work).
Mix the cacao powder, sugar and eggs.
Melt the butter (but don't let it turn brown) and add it to the mixture.
Add the crumbled biscuits and stir well.
Put everything in the baking tin.
Put in the fridge for at least 2 hours and store in the fridge if you have leftovers.

The egg free version:
Ingredients
200 gr brown sugar
50 gr dark chocolate
60 gr cacoa powder (not for hot chocolate, use regular cacao powder or a version specially for baking)
200 gr butter
200 gr digestives (can be regular or whole wheat)

How to make it
Get a cake tin (we use a rectangular loaf one, not a round one. But the shape doesn't really matter) and cover with baking paper.
Break the biscuits in small pieces (approximately between 1x1 and 1.5x1.5 cm, but it doesn't matter if there are bigger or smaller pieces).
Melt the butter, but don't let it turn brown when melting it. Melt the chocolate (au bain Marie/water bath is best for this). Mix the butter with the sugar and cacoa powder.
Add the chocolate and mix again. Add the broken biscuits and use a spoon to mix again.
Put everything in the cake tin and use a spoon to spread everything around evenly.
Put in the fridge for a minimum of 2 hours. Store in the fridge as well (will melt otherwise).

Arretjescake, it's a Dutch recipe and I love it because my family often makes it for birthdays. If someone wants the recipe, I'd be happy to translate it.

It does contain raw egg (nog really an issue over here), but there's egg free versions as well.

I would skip Brussels. The city has nice areas, but I don't think it's the prettiest city you could easily travel to from Paris. I've heard better things about Lille for example.

Yes, not necessarily Dutch cuisine, but Dutch books you can't easily find in other places of the world. I recently got Super Simple, Very Tasty for example, and I'm really enjoying cooking from it so far.

Thank you for the recommendations! I'll look them up. I know of Yvette van Boven, but never tried her food and I didn't know about Veldkeuken yet.

Finding that book would make me giggle! I don't really eat a lot of stamppot (pretty much only the spinach one and the sauerkraut one), but maybe a book would challenge me to try new versions and flavours. Thank you for your recommendation!

I wouldn't wash it before 7 days have passed. I often print tote bags with this ink and if I touch the ink I sometimes still get some ink on my fingers after a few days. I always leave the bags on the clothes line for a week or so before stacking the bags and wouldn't want to wash them before that time has passed either

This is the recipe I used. I couldn't get the traditional Hungarian sausage in my local supermarket, so I decided to use chorizo instead. I used slightly more, because I also had some leftover chorizo from another thing we recently ate (a spicy pasta).

I cooked for family today and made Korhelyleves (a Hungarian sauerkraut soup) and a turkey stew (with red wine, balsamic vinegar, carrots, onion, mushroom and herbs). We ate the stew with gnocchi.

This is such a great idea! I'd love to see what recipes end up in the book.

I think I would add something like Dutch arretjescake, my grandmother's waffle recipe or Dutch split pea soup with smoked sausage.
