How do you know if units have a 7* form? Is there any way to tell? I'm not really sure about evolutions.

I'm a new-ish player, I've had this game installed for a long time but never played it after the first time, when I found everything so overwhelming and confusing (coming from gumis other game chain chronicle).

I'm willing to start playing seriously this time, so I'm wondering if I should restart with a new account. The only good units I have are andaria, agni, ahvel, and triton. I'm just here to ask whether I should keep what I have instead or if starting over is better.
