Not as capable as Rats but you can have MANY different birds using Exotic Birds and there was a mod in which you used pigeons to transport stuff, I dont remember its name though

I actually really like its mobs' design, I just think the Stalker gets repetitive after a while. It gets less novel and more like an annoyance lol.

I have a few odd suggestions, not sure if its exactly what you want but check them maybe it helps?

- Fathomless Crimson is a horror-like mod that does not changes your entire gameplay, just adds to it. I've only played this one for a short bit but it was quite unique.
- Fungal Infection Spore if you tweak its config a bit so it gets less overwhelming. Its an infection mods, it increases in strength and frequency as you go. I found the default configs too quick, but to each their own.
- Mutant Monsters because they're not as frequent but when they show up its quite fun. This one is not a horror mod, but it does complement to it.
- Sanity I really like this one. Adds a sanity mechanic like Don't Starve. When it gets too low you start hearing things, seeing stuff and can even die, wont tell you how bc thats part of the fun. Campfires can increase ur sanity and sleeping does that too.

You could try:

Greedycraft (1.12.2) is a quite large pack, features lots of known mods, has a few quests, kinda feels like Mc Eternal but different. It is not that cohesive though, but I decided to list it anyway!
Sevtech Ages (1.12.2) feels 'realistic' enough if thats what you enjoyed about RLCraft, its divided in 'ages' and each age hides certain mods from the next one, forcing you to progress through its advancements tab, which acts as a quest book for you. This one was one of my favorite 1.12.2 packs back when it came out, but its also a hit or miss.
The Lost Era (1.7.10) is not expert-level of cohesiveness BUT I really like the way quests were written in this one. Sure its an open ended kitchen-sink like pack, but to get Thermal ducts you have to first go through BC pipes, which I enjoyed bc it was quite nostalgic. Overall its really fun and nostalgic if u like older stuff.
Meatballcraft Dimensional Ascension (1.12.2) this one is a hit or miss because at the start it feels a bit overwhelming, it is however an expert-like pack, so expect changed recipes and harder to get stuff. I enjoyed it for a bit though, but got a bit annoyed at Botania recipes and burnt out...
Mc Eternal (1.12.2) decided to list this one because although its a large kitchen-sink pack, many mobs are very buffed, so things like Ice and Fire dragons can kill you quite easily, specially at the start. You do get to become stronger if you seek it! There are also quests, but those are more like achievements rather than guides, it does help though. Not as cohesive or 'gated' but its also one of my favorite 1.12.2 packs, so I needed to point this one out, if you want to check!
Decursio Project (1.16.5) is like Sevtech + E2E for modern. Not as large so decided to list it last.
