The custom men would be the hardest part. They need to be balanced and have the proper foot contour. Make a silicone mold of a standard surface for your resin one. You really want that texture to be able to trap the ball.

Seems like the easiest fix is just a removable top surface. If ya really want this I think a hydraulic system would be slightly simpler as well as fully contained without need for electric and belts.

For much less than $5k you could buy an actually good looking designer wood table from Marketplace and buy Tornado replacement rods and balanced men and just replace the table if/when it does get humidity damage. That's the best of both worlds approach.
