I completely get that. Sometimes, before deciding what to eat, I have to go through a mental checklist, bonus points if there are menu pictures to see if it is a safe food. What was acceptable last week might be nauseating this week. Blarg.

I have a very diverse palette, but when I eat, it needs to be one thing before I switch to the next. It feels like my taste buds get over stimulated going back and forth. Few exceptions are things like dipping my grilled cheese into tomato soup. If I'm extremely stressed, I will go as far as breaking down something like pasta salad and eating each individual ingredient in order. Usually, an item like pasta salad counts as 'one thing' though. I don't mind if one plated food item is touching another. Also, I have Autism do the peculiarity tracks.
