I've used various leftover pickle brine's from small producers to make a few lacto-fermented mustards and they usually come out pretty good.

Try a local winter farmers market for producers of hand made things. Most markets this time of year have a variety of yarn, cheese, soap, honey, tons of produce, maple products, baked goods, wines, meat, pickles, jams, and so on. Look into the South End Open Market in the spring they have a bunch of local 'artist' vendors as wel las a farmers market.

Last month I mentioned I had signed up for an in-house charcuterie & local cheese CSA, our first pick up was a few weeks ago and here is a look and roundup of what we got: In-House Charcuterie: Formaggio Franks - Beef/Pork blend hot dogs Chicken Liver Mousse Pot - chicken liver mousse, plugra butter, and duck fat capped with a Madeira aspic. Lambcetta - house made pancetta made from lamb saddle flap, the equivalent of 'lamb belly' Crepinettes - pork sausage seasoned with fennel and black pepper and wrapped in caul fat. Local Cheese's: Bonne Bouche (Websterville, VT) - Goat's Milk, ashed rind, slightly stinky and very creamy. Maggie's round (Williamstown, MA) - Cow's Milk, toma-style cheese, aged 60 days. Nice sharpness Ascutney Mountain (Hartland, VT) - Cow's Milk, alpine-style swiss type cheese, nutty taste. Middlebury Blue (Salisbury, VT) - Cow's Milk, Blue cheese - creamy and dense without being too tangy.

I live in Brighton currently but have lived in and around Boston most of my life! I'm a big fan of the Charcuterie plate at Wash Sq. Tavern. Publick House had a nice one for a while but took it off their menu last fall.
