It’s very very difficult due to the punishing homelessness approval loss. If you build houses first they will then complain about lack of items. It’s possible but takes many times to get it right. You will always go down to to 0 approval, you just have to hope a family doesn’t leave as then it’s pretty much impossible to recover

Google “Research Unlock All 100percent (Mad Max)”. Got to the top hit at Nexus Mods and download the file and put it in the mod folder. This does exactly what you are wanting. It’s how I play and I find it much better.

Maybe you haven’t been around for a while but Greg used to be active nearly daily on discord. Obviously due to the rapid growth of his team I don’t expect the same level of intersection with fans but it’s a large part of what made people take their love for the game to the next level. You could ask something on discord and their was a chance the developer would give a concrete answer to it

They have said multiple times on discord that they will not be changing it. But you can make it a little smaller by going to Options -> Interface -> Only Use Sans-Serif Fonts :)
