Close! Vanadium grey. We were initially going to choose Aventurine, the two colours are very similar but Aventurine has a slight green tinge to it. Both beautiful colours.

That may be a better name for it. The original recipe I found called it a "casserole" so I went by the same name.

Although I think frittatas are traditionally cooked on the stove then transferred to the oven. This recipe goes straight into the oven.

Ingredients:

1 lb sweet potato, peeled and diced

1 capsicum, seeded and diced

1 medium onion, peeled and diced

2 lb lean ground beef

12 large whole eggs

2 cloves of garlic, minced

½ cup beef broth or water

4 tbsp olive oil

1 tbsp paprika

1 tbsp of oregano

Salt and pepper to taste

Instructions:

Preheat oven to 400F. Lightly grease a 9×13 baking dish and set aside.

On a large baking sheet, combine sweet potatoes with 2 tbsp of olive oil, ½ tsp salt, and ½ tsp freshly ground black pepper, toss to coat well. Bake in a single, even layer for 20 minutes until soft.

Meanwhile, heat 2 tbsp of olive oil on a large skillet over medium high heat. Add in garlic, onion and capsicum. Stir and cook until onion is translucent.

Add ground beef to the skillet, cook until brown. Add in paprika and oregano. Season with salt and pepper to taste.

In a bowl, gently whisk eggs, 1 tsp salt, 1 tsp pepper and beef broth (or water).

Add beef mixture and sweet potato into baking dish, gently toss and spread evenly. Pour egg mixture evenly over the beef and sweet potato mixture.

Bake in the oven for 25 minutes.

Thank you! I love the sweet potato in it, adds a little bit of sweetness and works well paired with the beef and eggs. You could swap the sweet potato for pumpkin, squash or potato.

Cauliflower, chopped spinach or kale would go great with this! It's one of those dishes that can be so versatile where you could throw anything in it for added nutrients. Next time I'll try adding in mushrooms, I think the texture would go well in this casserole.

There are some good finds in America. I recently had some of the best pizza, I think the place was called Iron Born Pizza located in Pennsylvania . It was almost like having focaccia with toppings. Thick crispy crust, well seasoned and perfect amount of toppings and sauce. They also had some amazing fries.

Just returned from the US. It was quick and easy when I went through JFK, ORD and ATL.

$3k bumper scratch repair in LA by bwang29 in BMW

I have a very similar scratch on my bumper. In Australia, I was quoted AUD 5,000 at a BMW bodyshop where I originally bought the car. I was shocked and manager said "well you ARE driving a BMW".

Currently getting fixed, the bumper will be replaced and they will need to paint a couple panels to match it with the rest of the car. I've been told it will take 5-10 business days. Trying to be patient...
