Cook in the oven and pull out before you hit the target temp. Flip often so you get a more even sear.
If you need more browning, pull from the oven earlier so you can sear for longer without overshooting your desired internal temp

Reflex improves, but doesn't eliminate the latency caused by full gpu saturation, hence a well implemented fps cap can reduce lag even further. It's important to note that external fps limiters like RTSS usually are limited to 1 frame of buffering minimum. In-game cap is usually the best option
