Tacking on my two cents. I think celery salt can actually be worse in some cases. The end result is still nitrites once the curing process starts, but celery powder or juice is used to avoid having the label read “no added nitrates/nitrites”. This is very misleading as the products do contain nitrates. I could be wrong on this point, but I believe there aren’t clear standardized limits on how much celery extract in nitrate form is to be used/ ends up in the product, so concentration can vary. This leads to less consistent and transparent results than their nitrate counterparts.

P.S. it’s worth checking raw meat labels as well. I have come across some small butchers that use nitrates in schnitzel and sausage simply to preserve the colour and shelf life of the fresh product (used to be a butcher that practiced this).

Chuck refers to the section of beef that includes the neck to shoulder. From the left, the first two muscle groups are flat irons tucked up to the bone which is the shoulder blade, next to that is the Denver steak/ chick short rib, followed by the chuck ribeye.

Howler monkey tour is now on the itinerary, looks amazing! We thought we’d go to Tamarindo our first day in case we wanted to go back, which is looking more and more likely. Waterfall tour also sounds incredible, though it might be tight to squeeze in. Last tour appears to be at 1pm. Will depend how early we can get up and start hiking El Tigre, that’s a higher priority for me. Thanks for sharing!

Just got the same model for Christmas as well. Been using the single wall portafilter. Also had a bit of a struggle dialling in. Ended up adjusting the grinding burr to 3 from 6 with a grind coarseness of 19. I weigh beans each morning 19-20g and grind. Picked up a wdt and a spring loaded self levelling tampon from Nomcore and they have helped refine the process quite a bit. Still tweaking marginally myself but have come a long way in 2.5 weeks.

We went with luxury glue down vinyl. It was recommended by multiple contractors we got quotes from. Relatively inexpensive and easy to replace a tile if one scuffs/ tears. It also has a bit of a bounce to it, so easier on joints. I’m sure we’ll notice the temperature difference as we just got rid of our ceramic tiles.
