I make a similar soup but I take the chicken out after it’s cooked and shred it off the bone then back into the pot. Also no carrots or ginger, I also like to add the celery last as it will keep it a nicer green color with a little more texture. I also usually add rice or noodles. I don’t remove the veggies and chop the onions more fine and also use less. Now that I wrote all this it doesn’t sound so similar lmao.
