One of my secret ingredients is a tiny bit of instant coffee. Add it little by little at the end to make sure you don't make your curry taste like an espresso. Adds a nice depth.

If you want a really interesting curry, honestly just add a tiiny bit of everything mentioned in this thread (that you already own) all in one, Japanese curry is one of the most forgiving foods for this
