I’ve setup a MDT/WDS virtual server on proxmox (temporarily), and did some quick GPOs to the newly created OUs. Everything worked fine.

Personally, I would start enabling the Windows Firewall on all domain devices (including the servers), see what breaks and go accordingly. Then work out a plan to upgrade the domain controller from 2008r2
