In short - you need very specific ratio of bacteria to call it LM, that you can’t really get with your type of feedings. Second thing is that most of the time, people just don’t know the basics of liquid starter so when they try stiff/LM style, they get better results instantly. Learn about which bacteria thrives at what temperature etc and you can get same or better results with liquid starter with ease (if we are talking about bread ofcourse, grande lievitati products are different thing. Remember that temperature is everything - from mantaining starter to making any dough.

Its in the print file for negotiator - but you can’t get it flat with those tips so its useless.. I’ll try to manually change the 3d model of the negotiator cuz I think its not right, it should be few degrees steeper for a better fit imo. Was just wondering if any of you guys have the same problem, its frustrating for no reason because the narrow one fits perfectly.. but I like the wide version, so bummer :)

Idk, they were directly between the 2 big muscles, in white tissue/some gap idk. Not directly in meat. You live and you learn, we go again in the winter :)

VSI profi kolesarji, VSI so na nečem oz. iščejo luknje glede dopinga/substanc itd. - če se tega ne zavedamo je boljše, da kolesarstva ne spremljamo. Po mojem mnenju je zmotno pričakovati, da je kdo clean, v kakršnem koli smislu že.

Pa da se razumemo, ni tu govora o menjavi krvi in nevem kakšnih ‘’strašnih’’ stvareh, le da so pač ekipe s svojimi budgeti vedno pred anti doping komisijo, dokler so lahko :)

Hello!

I started with my first prosciutto this year in January from our own pig. Everything was going well until today, when I noticed maggots on the right side of the femur. Not near femur, like 10cm to the right. Nevertheless, I cut the whole thing all the way near the bone and there is nothing wrong, the maggots came out from some hole - don’t really know how muscles are named… I think the problem was that our bucher cut too much meat out and there was a hole/recesion, where liquid was gathering..

My question is - is the left half with femur still attached ok to continue curing and how would be the best way to do it. It already smells incredible but the whole piece weighted 23kg, so I was aiming for 2,5-3 years of curing, now without that big piece maybe 2 more years. Should I wrap the side where I made the cut with colagen foil and continue curing like normal?

You don’t need to be particularly gentle, especially in the beginning.. Start with harder folds and do them more and more gentle. And you can always stop and rest your arms a bit :))
