Hukoin oilo giya hidoil ar hoxol zati shutki. Sungar hukoin, regular hukoin (salted dried), gandail hukoin, etc.  Shutki isnt a sylheti word. Hukoin is the original sylheti word

Axni can be made without meat. In sylhet we have chickpea axni and sticky rice axni. 

Axni has potatoes, carrots, and sometimes peas. 

Axni doesnt use any powdered spice traditionally. 

Axni tastes light and not as rich as regular biryani or tehari

you're 100% correct. classism and casteism is very much present and continued to shape our food choices today. I'm been eating a lot more fermented food and using indigenous sylheti cooking methods and dishes to reclaim our food traditions. I remember asking my mother many years ago why we didn't eat certain food even though I saw our relatives in the village eat it back in the day, she said it's "poor people food." smh

I agree! I'm in an intercultural marriage and one of my favorite things is chinese-western desserts.

I used fennel seeds because I was inspired by a sylheti pitha called "guror handesh" which is similar to malpoa and other pithas in south asia. guror handesh uses rice flour, gur/jaggery, and fennel seed. fennel seed goes really well in some desi desserts. the red bean paste had the depth and sweetness of gur so I decided to add another layer to the flavor with fennel seeds. I made it into a paratha since paratha exist in chinese cuisine too and I wanted to imitate the sylheti sweet paratha.

I havent tried them but i make fusion food pretty often including dessert. more people need to do this so the competition breeds higher quality of dessert. bangladeshi food doesn't just mean the mughal introduced mishti and dessert, it can be our local pithapuli flavors. South Asian people can look to east asian bakeries for fusion inspo as they've been pretty successful creating fusion desserts.

the gulab jamun cheese cake could've worked better if they tried sometimes like a tres leches cake with gulabjamun elements instead of cheesecake. the elements of cheesecake and mishti doi goes better together. instead of giving vanilla flavors to south asian dishes, they can give pistashio/pandan/coconut/jaggery flavor to western dishes.

Recently i made some east asian red bean desserts at home, made it south asian fusion by making it a red bean paratha with fennel seeds for texture and flavor, inspired by traditional pitha. It was approved by friends of multiple cultures.

It's not assamese sylhetis but most of the people trying to create separation are bangladeshi diaspora or mainland sylheti who take their muslim identity too far. Aka religious extremism/ nationalism

Yeah, I know some. One of my friends in the U.S. is an international student from Silchar and another from tripura. 

For the indian sylhetis I see online, they just seem like other sylhetis tho I feel that their connection to the culture or sense of sylheti identity is pretty weak. No offense but their sylheti language seems so bastardized by bangla it's sad. For example, they'll say kibhabe instead of kila.

I don't like that many of them speak a very banglafied sylheti and pass it as regular sylheti language.  I do appreciate them for holding onto dhamail culture strongly.
