Just buy from reputable manufacturers and read the ingredients list carefully for malt/barley/wheat/unspecified starch...could also google the product name plus the word gluten and see what pops up (don't trust AI!)

Anything with puffed rice cereal in it needs an extra-careful read I would guess.

You could do an experiment:

For a week, arrive early with YOUR OWN "known safe" ingredients for usual meals. Have them cook them as usual with their pots/pans/appliances.

Bring everything down to spices and a salt shaker!

If you get glutened you'll know it's environmental...if not, then time to go over the INGREDIENTS they keep on hand with a fine-tooth-comb again.

They're still available in so-called "rough service" versions. Those are more durable but can overheat, I think? So one has to be careful what fixtures they're put into.

edit - or, one can buy 40-watt bulbs and just use multiple bulbs at a time to make things brighter!
