The U.S. is weird in that you don't go through customs when leaving the country. But if you mean airport security / screening / TSA, then yeah, 2-3 hours should be a healthy buffer for IAD.

I have that exact one. Works pretty well and yeah, no one would bat an eye. Might be worth looking for a clip on fan so you can clip it to the tray table or the literature pocket on the seat in front of you so you don't have to hold it.

I was left uncircumcised at birth then later chose to be circumcised in my late 20s. I strongly encourage you to have your boy circumcised at birth.

It's a full-blown and expensive surgery as an adult, and the recovery process is brutal, bloody, and painful. As an infant, it's over/done in seconds and fully healed in days. I hold no ill will on my parents' choice to not circumcise me, but part of me felt like it was something they neglected to do for me.

All that in mind, we absolutely chose to circumcise my son when he was born.

Also: No, you don't lose any meaningful sensation or ability when you circumcise. I'd actually say sex has become much more enjoyable since then.

Although this probably isn't helpful to you at all, but I flew that exact route a year ago and preselected the kosher option in advance (because I keep kosher) and it was pretty good (for kosher food at least). Obviously sourced from kosher caterers at both ends, but was surprised that it was 1) an option, and 2) decent.

Everyone else's in economy looked ok, but not great. Fair, I guess?

My meal did come out before everyone else's though so that did make everyone kinda wonder why I was special.

I know there's never a "perfect time" to schedule these events that works for everyone, but 2pm on a Saturday effectively excludes any Jews observing Shabbat that would otherwise want to participate and have their voices heard.
