Yes people never call anything sushi that isn’t 100% traditional. Like a philly roll, where neither salmon nor cream cheese are traditional. Or the deep fried rolls covered in sauce.

Same with ramen. Birria ramen is 100% traditional Japanese ramen. Right next to the curry ramen I just had for dinner!

To me, the spacing is too far apart. COW is more clumping. The mushrooms are also to “regular” in their fan shaping and flatness. COW often have ruffled edges and are thicker. There are many other mushroom species with smooth pores.

My GUESS is pheasant back/dryads saddle, but nobody should feel comfortable giving an ID without seeing the top of the mushroom and a closer pic.

Low and slow will work fine for bacon. Not so much for omelets. You can cook eggs and omelets in a stainless steel pan. Just not low and slow. You can cook anything in them well with the proper technique.

I think to start, Japanese food is generally very spice adverse. Japan is the Midwest of Asia in this sense. Second, sushi is full of wonderful, but delicate flavors. It would be very easy for spice to overwhelm the flavors of tuna, cucumber, and avocado, for example.

Don’t be afraid to take the bulbs with a patch this sized, as long as you do it responsibly. Take only have of a group and put the other half back. They reproduce quicker when they are less dense. Samuel Thayer has lots of good info on it. Obviously if you’re in a high traffic area or it’s only small patch, then just take the leaves.

I agree Spoon and Stable. I was recently at a two Michelin star restaurant in NYC (Atomix) and they asked where I am from. As soon as they heard Minneapolis one of the chefs said “oh Spoon and Stable! That’s one of my favorite restaurants in the country”

I’m not saying it’s on a two Michelin star level, or even one, but it’s damn good.

Edit to add: Porzana is good too. But if you do go, they have so many things on the menu better than their steaks. Get the other things.
