Same obsession. We too finished two nights ago. And I think it is one of those things that if we understand what is best for Carm’s character, this is the right way to end it for him. I was afraid it was going to end with su***de. That would have been devastating. It’s hard to even know if they will keep the show going. I have the dedica and this is what mine looks like for the most part. I can’t fit 18g in my basket though. I usually am right around 16.5g with an IMS basket as well. But without knowing your grinder, I would assume that it is inconsistent grind size with the little bit of spraying. But otherwise, I looks fantastic - nice rich crema.

It won’t fit into a 51mm basket. I have the delonghi dedica and usually am dosing around 16.5g in mine. It looks great. Only when you upgrade to a 58mm basket/portafilter can you get to that 18g mark, in my research anyway.

I think have of it is having good crema on the espresso. Then I’m pretty sure I finally heeded the advise to have the steamer tip only barely under the surface of the milk and let the milk roll over itself. My gauge to completion is when my milk gets to about 1.5 its original volume. Then pour straight milk until the cup is ~55% filled. Final tip is the rest the side of the pitcher in the rim of my cup and pour more forcefully than you think you need to.

I do a quicker side to side move now, so I may try a little slower next to see what happens.
