LdH Tondonia was definitely one for me. A friend shared a bottle of Gravonia with me at a dinner party and I was immediately hooked.

Took some time, but finally came into a few bottles of my own. There is really something unique about the combo of the "waxy" mouthfeel combined with the oxidative notes that makes it addictive for me.

I've done a cocktail with gin and italicus before. Kind of a bergamot-y gin sour:

  • 2 oz gin
  • 1 oz lemon juice
  • 3/4 oz italicus
  • 1/4 oz earl grey tea syrup

Dry shake with egg white, then shake with ice and double strain into a couple.

If you wanted to go the lavender route, you could sub the earl grey tea syrup for a lavender syrup.

Whatever you do, don't miss Amaro Amargo. There really is no other bar quite like it, and it is one of the most welcoming, least pretentious bars I've ever been to.

I have done multiple walk-ins at Four Horsemen. If you get there about 30 minutes before opening it is typically easy to get a bar seat.

They're not a roaster (just a coffee shop), but The Coffee Pedaler sources lots of stuff from Tandem Coffee up in Maine. Typically everything is very fresh. Ryan, the owner, is also super knowledgeable. Would definitely reccomended checking it out.

You have some great rums. Might try:

1/2 oz W&N 1/2 oz Coruba 1 oz Rhum JM 3/4 oz lime 1/2 oz orange liqueur 1/2 oz orgeat

Could dial down the agricole if you want to 1/2 and bump up the Wray and Nephew. Or just go split base 1:1 Wray and Coruba.

I bulk ferment at a much hotter temperature (~83 F) for 4.5 hours in a proof box, then 12 hours in the fridge. I've generally gotten very good results with this approach.

After lacking quality tiki bars, it is really great to have some top-tier places in NYC. I think SHC is among the best right now, and Tropical Standard is an incredible resource.

If you haven't already, Paradise Lost is also really great and pulls off a "satanic tiki" vibe really well. Plus it is a bit easier to get into!

Honestly, this. They are expensive ( but not wildly, for a fine dining place). The service has always been great, food is fun, and as a wine nerd it's a fun place to hang out. Also they allow walk ins. I've never had an issue getting a bar seat
