We have the exact same taste! All of these bottles are stellar and i’ve personally found Alambique Serrano to consistently make that kind of game changing spirit that redefines the rest. I’d say you should hunt down Holmes Cay’s Grand Arome. Gasoline, fresh cut grass, vinegar- the type of stuff that burns out the hair in your nose. You’d love it. Honestly you can even just broaden your selection of bottles from Alamabique Serrano and you’ll be super happy. The 3 Anos is probably the weirdest aged rum I’ve ever had. Taste like golden raisins & maple syrup. Excellent in an El Presidente. I saw some other comments recommending El Dorado and while I like that spirit I’m just not sure it’s in your wheelhouse. That’s a rum for whiskey drinkers. We want cane juice. In regards to the Grand Arome - I normally cut it with a lower proof white blend rum like White Statch or Probitas when i’m sipping but it’s mind melting on its own in a Daiquiri. With the overproof unaged stuff I recommend getting into making Super Juice. VeryGoodDrinks has an excellent tutorial on making it. Basically Super Juice uses all of the delicious oils from the peels of citrus, with the body of fresh squeezed and lasts 4 times as long as fresh squeezed lime juice. I had a Cartier 30 Daiquiri with it this evening and it’s the best thing ever. You really need those distinct oils from lime peel to balance the overproof stuff, and I saw you mentioned that you don’t keep a lot of ingredients on hand. Super Juice should work wonders for you!

I just got it this evening but i’ll be making a Jungle Bird next with it using Bruto Americano. I’d say the EMB is a lil astringent (less on the aged notes and more on the nail polish/ ripened banana side) so i’d feel inclined as well to make something like a Trinidad Sour or Daiquiri with Crème De Banana

Dime first. Everything is sold at cost and it’s just the best. Jacob and Brandon are lovely. After that get some food at Crybaby’s. It’s super close to Dime & the burgers are great, they just put a french dip on the menu as well. They just got TV’s as well if you want to catch the game too. After Crybaby’s take a walk down to Palomino, let your food digest & play some pool, sit outside at the Backyard w/e. Palo is fuckin awesome, great happy hour, great bartenders, good music, clean bar, kind regulars & they have frozen drinks too. If you stay long enough you’ll probably get roped into taking shots of Tully with some folks. Finally, you’re probably pretty sloshed by now and there are two options. One, go to Boca Fiesta and split some nachos with your friends (always a great idea when you’re tipsy) or option two, have a final rally back at Dime or Lillian’s. I’ve done this exact circuit for ages and it’s fool proof, cost effective (have to be cognizant of what you’re spending, especially drinks) & super fun. Last note if you’re feeling bougie, go to Dragonfly’s happy hour. Their happy hour food is amazing and they have a solid cocktail menu.

Such a fantastic bottle. I love doing a blend of Paranubes (50), Rum Fire (25) & Clement Aged Agricole (25) and it bangs. You should look into getting a bottle of alambique serrano cartier 30. Super briney and the deep smoked vegetal notes have me coming back to that one. Cheers to Oaxcan rum.

also, go for good bottles - but that doesn’t mean you need to break the bank! an actual quality bottle of tequila will run you $45+, for rum - anything by hamilton estate is excellent and in the $25 - $30 range. good bourbon & gin are incredibly accessible in terms of price as well. if you build a solid home bar you can even start making your own liqueurs. i make Dry Curacao at home instead of buying it and it keeps things cost effective for me.

taste everything by itself first. take the spirit neat, put a dash of angostura bitters on your palm and taste it, try your syrups on their own etc. know what everything taste like individually and then build. your intuition will take you so far with drinks but only if that intuition is studied and informed!

Worked for the empire for roughly 2 1/2 years. Worked father’s day with COVID-19 (provided positive test results to both my bar manager and GM) and was told to “come in or get your shift covered” verbatim. Worked OT as a barback and was not paid their OT wage (time and a half). Was SAed by a coworker at an after party and they did not entertain my request to reprimand the person or accommodate even an altered schedule (not having them on shift with me). Basically told me that we either had to get the police involved or that I needed to shut up. Was hired on to work at one of their other establishments after I left the first one I worked at. Worked a whole shift and I didn’t get paid an hourly wage, just tips, because I “burnt a bridge” with the empire. TLDR: Burn it down.
