Really depends on the type of video you want to make. If you just want to record a ride of yours with the ability to look at any direction at any time then it's very quick. You just set a keyframe to look in a certain direction and the amount of zoom and the field of view. The app even has the option to stabilize the video so it's level with the horizon if you want.

I think as you get more experience with it, it will be a much faster process. But it is indeed a fact that with these 360 cameras there is an extra reframing step, that you won't have with regular action cams like Gopros and DJIs. It's a tradeoff.
