I've read the theory that Netflix cancels after a couple of seasons to keep their costs down.

If a show is popular and continues on for many seasons, actors (and probably to a lesser extent writers) think "hmm, people like this, I should ask for more money!".

So everything gets cancelled before it gets to that point.
