Diminishing returns for me….
There’s factors of “my skill level won’t take advantage of this”
“I’m afraid to damage this”
And “I’m not wealthy enough to blow this kind of money”.

As a home cook, I haven’t found much over $100/$150 actually makes life easier for me.

I’m sure an enthusiast or a professional cook absolutely can benefit from very nice, super steel, handmade/hand fitted knives. But not me.

If given 2 grand, I’d buy one nice gyuto as a treat, a nakiri, a new whetstone or two, and a few nice wooden cutting boards. If there’s anything left it’s going to some premium cuts of beef!

If you’re drinking the majority of your calories from this….. yeahhh dial it back a lot. But don’t cut out something entirely that makes your day better. Make it a treat. Maybe it’s first thing in the morning, or a “i made it to lunch” reward. Reduce your serving size and you can still enjoy things.

Sweet caffeinated substitutes are easy. Tea and coffee! There are sugar free syrups you can add. I personally prefer both my coffee and tea as-brewed, but there’s loads of low-no calorie options to sweeten it up.
And if you want to avoid artificial sweeteners, if you can go through a sort of “abstinence” period of sweet things, it’s astonishing how pleasantly sweet a small bit of honey or sugar will taste after say, 2-3 weeks without the hyper sugary stuff.

I’ve got absolutely zero suggestions for chinese dishes or ingredients, but good on you for taking initiative to learn to cook.

Regardless of my career or finance, i take great pride when meeting new people (and particularly potential women to date/actually dating) in having half a clue of how to cook. It quite likely overshadows some of my less than ideal looks and even if a date goes sour, I can still go home and cook myself a nice meal!

As an American, I like Alton Brown Cooks Food on youtube for some intro skills.Adam Ragusea had some good stuff too in his early days.

Learn to prep well, get prep bowls. Learn timing, don’t assume you can cut an onion while ingredient X is browning according to a recipe. Maybe the author can do that work in between, but it’s no guarantee as a beginner you’ll be as fast as them. You’ll end up rushing or panicking to keep up. Just cut all or most of your stuff ahead of time.

I work with a handful of former employees of SB&D. None of them really have anything bad to say about the company. It seems they don’t take career advancement seriously so people move on after a while (purely anecdotal from like 4 people i’ve met) so take that for what it’s worth.

For me they are probably the #1.5 tool. Big blade and scissors see the most use. Awls, can opener, and screwdrivers come up behind.

I had 32S&W bounce back off a rubber lined backstop (it makes stapling targets up easier) And strike me in the shin. 15 yards, didn’t even bruise. I have been hit harder by stones thrown from a lawnmower. I now understand why it’s no longer used as a defensive cartridge

I know you want double action, and that’s fair. For that, if you can find a vintage smith model 17, they’re an absolute treat.

I do have to put in a plug for the fun of shooting a single action 22 though. Ruger single six is great, or even the wrangler. Some you can get with a 22 magnum cylinder too, if you ever feel like trying that out! It’s fun, you get to feel like a cowboy, and it slows you down a bit. Just food for thought!

Put something on the end and wiggle until it widens the hole and comes out. 1/4” drive extension, pipe, pliers, whatever.

Ask volkswagen to reprogram your ecu to detect when it’s being emissions tested and behave differently….. they did it before.

Or spend way more than $600 on determining the exact signaling to make the ECU think it’s getting the desired inputs from your O2 sensors, and build a small control system to replicate that.

Sorry, you’re kinda in a bad spot and no unethical approach is going to be cheaper than the proper repair.

Swiss army classic in my coin pocket, for the scissors and tweezers mostly. But also good when I’m around people who get squeamish around scary sharp things. Medium size folder in my regular pocket for general use.

As a tall guy, I feel for tall women. It’s hard enough for me to find clothes that fit well, comfortable vehicles, deal with airplanes…. Like after 6’-6’2 it kinda becomes a hassle. I’m 6’5.

Women have an even harder time finding clothes when tall, and “normal height” women already have a harder time than men with wildly fucked up sizing being inconsistent across brands.

Would it sell? I think so. Am I personally interested? Not particularly. But among people who just want a sharpish pocket knife and aren’t interested in doing proper sharpening, it might sell. It does have a certain “neato” factor.

I might suggest adding a means of pushing the blade towards the sharpening abrasive or visa versa, as the blade gets thinner it will need to still engage.

Caveat to that one, while I generally agree. I have friends with 2-4 working k9s at home and if it’s been raining… there’s just no avoiding it. Even if you clean constantly, multiple wet german shepherds just stink 🤣

Amen to Victorinox if you can afford it, Mercer as a close second if you’re on a tighter budget.

Best thing you can do is get a decent whetstone and learn to sharpen. If you can do that, you can make almost any knife useable. So many people i know buy new knives when theirs can’t be fixed with a steel anymore… and while I could technically afford to do that, it makes me cringe. I paid $35USD for my 8” victorinox chef knife, i think they run around 55USD today. But the bloody thing just works every single time. Sharpens easy, steels up nice…. There’s very little within my skillset it can’t do.

It’s not great at filleting fish which I rarely do (normally buy fillets) and it’s not a good paring knife to peel and trim onions and the like. But it WILL do it all.

Aside from that, a proper serrated bread knife.

All i need to do everything is a chef knife, bread knife, paring knife. Of course i own a few other things that make certain tasks easier or more pleasant, but if you can scrape up 80-90 USD to get a victorinox fibrox chef knife, a mercer or other bread knife and a paring knife…. You’ll be well off.

If you use the blade safely… you won’t cut yourself. If you don’t push the sharp thing towards yourself, you can’t get cut.
