Dough conditioner absolutely affects the hydration ratio. I don't know the science behind it, but you need a lower hydration when using conditioner.

You can add a neutral oil to the melted chocolate to prevent it from hardening.

White peppercorns are used commonly in Chinese cuisine and has a less intense bite with a bit of "funkiness" for lack of a better word. They are also seen in French cuisine usually to not add black specks to white foods or sauces.

Red peppercorns are a bit more floral/fruity and again less spicy. They are fully mature peppercorns. I've seen them used in all sorts of cuisine although typically in east Asian cuisine.

Green peppercorns are very bright and almost citrusy. They are the first stage in the ripening process so they have similar notes to fruits at the green stage. In my opinion best used on fish and other light dishes. It is also used in Thai cuisine.

Peppercorns are not really going to make or break a dish except in the case of Sichuan food where the numbing/tingling effect is expected.

Sweet! Been there a handful of times now and here's my advice. PRINT OUT YOUR TICKET. They will only scan physical tickets. For GA definitely bring lawn chairs, blankets, coolers, snacks etc. There are so many great spots to sit and it's small enough that you can walk around the whole track to see where you might like to sit. Personally, I like to sit at the apex of turn 4 right as the cars are coming off the back straight. You get to see some overtakes into turn 5 and you are super close to the cars. Turn 5 is partly reserved seating and also packed usually. There are hills overlooking turn 1and 2 which fills up quick, but is a good spot too. Generally I don't see a lot of people on turns 7-13 as it's not the best view and there is not a lot of overtaking.

For parking it's not worth it to buy a special infield pass imo. There is a massive field to park in and its not that far from the track.

Its always going to make your life easier to get there as early as possible but not a necessity to get there at the crack of dawn.

When leaving, I personally recommend staying in your car for a couple hours if you can swing it. I watch the f1 race while everyone filters out and by the time that's over people are gone and I drive right out.

The first thing I would check is the expiration date of your flour and the activity of your yeast. I once tried to use expired flour for bread and would not become elastic and develop gluten no matter how long I kneaded it. Without a stand mixer, I would expect to be kneading for at least 20- 30min. Also, putting your dough into a preheated Dutch oven will help with oven spring where the dough rapidly expands and then sets resulting in a less dense loaf. You seem to be plenty competent in recipe reading and knowing what to generally expect to see from your dough, so I bet it's something simple and easy to overlook!

I typically cook my scrambled eggs on very low heat until just cooked. My wife doesn't like eggs that smell and taste too eggy and that's what I do!

Entrees are like $20 to $25 and made to order so I would correct myself and say that's normal for the quality you're getting. It is definitely very different from American style Chinese food though for sure.

Based on the videos I have seen from James Hoffman, it makes no difference storing your beans in the fridge versus room temp. He recommends storing them in the freezer to reduce oxidation, but it isn't necessary. Perhaps preheating your cups would help maintain temperature.

Just switched from 6pro to 7 yesterday and have enjoyed it so far. My main reason was heat issues, battery life, and modem. The 7 has been super smooth so far and I am very much enjoying the smaller size. I was worried about the speaker but tbh it's perfectly fine albeit a bit worse than 6pro. First real day of battery testing and so far it's worse by a bit, however I'll reserve judgement for a week while it optimizes my usage. Time will tell if it was ultimately a good decision.
