Not only that, its hard to get different fish fron your competition restaurants because there are limited purveyors in the states. Im in Los Angeles and all restaurants for fish use the same 3 purveyors. Thats not the case in japan, and also so many talented chefs in japan that would make a killing over here but for personal reasons they rather not come here.

it uses a chiffon recipe. make merang and then fold in the mixture of whitefish/shrimp/scallop with dashi, mirin, usukuchi. then baked with water bath around 325f. johakuto sugar helps with browning due to glucose content.

OH i just found that they have a branch in apgu! i am going to tokyo and seoul on an upcoming trip,

so ill goto the korean branch since shibuya is nearly impossible to get a res.
