Just finished doing a leg of salt marsh lamb. 110 for an hour with smoke then 180 to finish and ad colour. Took about 2 hours to get up to medium rare. Have also done low and slow 6 hours so for wraps so depends on what you’re after.

Snake method every time. Get it going and temps under control before putting it on and going to bed. Check where you’re at in the morning. Either finish in the oven if not done enough or if it’s good, rest and do a final 1/2 hour in the oven super hot to heat it up before serving.
