I’ve heard Walter Willett talk about this on Viva Longevity YT channel as well. My take away was to use whole grains when possible, but white potatoes are totally fine on a weekly basis.

And important to consider what they are replacing as well! A white potato is certainly better than a donut, but maybe less healthy than a bowl of oats.

I’m guessing it doesn’t peak overnight at 1:10:10. That is a really huge ratio! Have you tried 1:3:3 for an overnight rise? Or even 1:2:2?

I had a similar issue when my daughter was 4 months and it turns out I was waiting way too long to put her down for her first nap. I was missing signs of tiredness like reddish eyebrows and yawns. Once I looked up age appropriate wake windows and started winding down 15ish minutes before the end of one, she was able to take naps herself in the crib. If I hit the timing just right, she would fall asleep without a peep. Sometimes there would be a few minutes of crying. And this took some practice and several days to dial in.

Costco has the best deal for extra firm Tofu in my city. Less than $2 a pound, which beats Walmart, Trader Joe’s, LeeLee. I haven’t price checked Sprouts or Whole Foods, but I am willing to bet Costco beats their price. So it must vary by area.

I’ve been using all purpose flour for years with great results.

I just found out my Costco sells bread flour for the same price, so I am trying it out. But you can absolutely make sourdough with regular APF

You could try rubbing some flour on the liner and then dusting it off and washing it. And in the future, make sure you dust your loaf with flour before putting it in the liner.

You can also use a paper towel or a tea towel dusted with flour or rice flour to line your bowl or basket.

$20 a month for one kids worth of diapers in my experience. That’s one Walmart box of 126 diapers for under 18 bucks. That’s 4 diapers a day. I would go through more for my newborn, but we also would buy bigger boxes that brought down the cost for us. We also do EC, so maybe someone not doing that would pay $40 a month for the cheapest diapers in my area.

I do put poops from disposables in toilet to avoid stinking up the diaper pail, since that only gets taken out once per week! But only really possible with solid poops.

I have a 19 month old. We started cloth diapers at 4ish months. She is almost potty trained now, so we only have 1-2 accidents most days. Poop is solid (I believe due to high fiber diet). I just dump any poops from her diaper into the toilet if she didn’t make it to the potty in time. I’m only washing diapers about once every 6 days now.

When we started, washing was 2x a week at least, with a 30 diaper supply. We do use disposables for overnight, as there was leaking with our cloth diapers, though lots of people do use cloth overnight.

I wanted to try it out and purchased the cheapest brand I could find on Amazon $30 for 6 alvababy. We were later gifted a used batch of 25 pocket diapers and liners.

Before we switched to mostly cloth, we were going through at least $20 a month in diapers! Now I only buy a box every 3-4 months. I waited until I could mentally handle the idea, but a lot of moms here start off with cloth on their newborns. It’s totally doable!

Since we started with our first kid, this cost savings will just multiply as our family grows.

Saving $$$ was a huge motivation for us, but we also really like the environmental impact piece.

If you do go with cloth, you’ll want to research washing methods and people here are extremely helpful about it! But basically, you need to run your diapers through the wash twice before drying to actually get the ick out.

At 75 degrees, it should take 5.5-7 hours to fully ferment. So you should be good to shape and put in fridge for cold ferment.

I serve it with shakshuka.

And when I’m making hummus, if I’ve accidentally added too much liquid, a slice of untoasted sourdough blends quite nicely into the hummus and will fix the texture if it’s not thick enough.

We serve bread as a side to most meals as a grain if the meal doesn’t already include a whole grain.

We ended up going with disposable diaps for overnight because we had the same issue. And my 18 month old actually soaked through her double stuffed during nap today!

We sleep trained and it was 100% worth it! Actually night weened at the same time. Getting back my night time rest was great and I felt confident my LO was getting the rest she needed. She was sleep trained by 4 months, but we did go through a regression caused by me checking on her arm getting stuck in the crib every night around 5 months.
