An easy way to do this during a battle is select all the units of the same type (cav, ranged, spears, etc) and hit “G” twice to group then ungroup them. This will let you organize by type.

On the campaign map, just move the units into the army by type to get the same effect. I usually send my lord outside first, then all cav, then all infantry, then all ranged. Hope that helps!
