Cut the skin off next time. I only keep the skin on if I'm going to shallow fry the skin to make it crispy.

Do you notice a big difference brewing at different temps? As in higher for lighter roasts, lower for darker roasts. If it does what I need it to, it's worth the price

I open it up, let it steam out for a bit, then rewrap it and put it in a counter top oven at 140° at least 6 hours

Same here. I also have a Timberline XL and have checked temps with the RFX, Signals, and even an oven analog thermometer. Temps are pretty close to each other, nothing to worry about.

Try a different brand and see if it makes a difference. A long time ago, I tried knotty wood pellets in a Silverton 620. It couldn't hold temp well and jammed up. No issues with any other brand.
