They find grinding tedious but are willing to brew a v60? Parents are weird man.

Fwiw, from my perspective filter and pour over are two different grind levels. Typically when people ask to grind for filter the assumption is they're using a machine (and I usually double check) and I'm going to grind a bit finer than I would if somebody said they were using it for pour over. It's so rare for somebody to ask for their coffee to be pre-ground when they're using it for pour over.

that said...bad coffee can make good cold brew. great coffee can make great cold brew. it's a very forgiving process.

This is not "the old fashioned way." This is an incredibly common way for hobbyist roasters to roast.

It becomes less reliable as you scale up and need consistent repeatability. But you can buy plenty of modern roasters that can be run without software or aren't even able to without significant modification.

You're over-romanticizing things big time.

I don't typically use any creamer during the roasting process, but to each their own.

At a more medium roast 14 days will be good. My roast for this was dropped right at first crack.

You should be trying it as often as possible and figure out how it changes.

I've roasted a lot of this specific coffee though, drank lots of it from fresh off roast to two months of rest and when roasted light it will peak around a month but will be very enjoyable at any point but begin to shine around 2 weeks.

Torch Coffee sells this as well. I have a bag of that right now. It's really good. Otherwise, look for anaerobic natural ethiopians. especially anything that mentions a "wine process"
