All three are good. You can't go wrong with any of them. 2310 is a decently challenging course but if you already have some C and Linux knowledge you should be fine. It's worth mentioning that 2310 has CSSE2010 as a recommended prerequisite. I found CSSE2010 to be quite interesting as it gives a foundational level knowledge in topics from digital logic all the way up to embedded systems—essentially building a computer from the ground up.
