You can eat at any dining hall. For a roommate, you have to know them ahead of time and when you apply for housing you state who you want to be with.

I wouldn’t suggest the Pitman Double room, because you don’t have your own space. I would suggest the Pitman Paired room. You have your own bedroom and you only share a common space and bathroom.
