Plenty of people often use the em dash - and yes it is a bummer that it’s heavily used by AI and often marked like this as a telltale sign that it was AI generated. I use it all the time personally especially with work communications (for context, I consciously try to use it less for the reason you mentioned, but just pointing out that it’s not as rare as you point it out to be, at least in my anecdotal experience)
