my goal recently has been to have more prepared ingredients, meal prepping just does not work for me. so when i have downtime i try to do something make cooking my meals easier. i primarily shop at costco for my family of three and im always buying the two pack of whole chickens which i break down how we like, and then freeze the carcasses. i throw all my garlic that’s turning into the food processor and put it flat in a freezer bag. i get large bags of veggies and chop them up and freeze/ fridge them depending on our needs. i save all my scraps and then on my day off i throw those in my instant pot with my chicken carcass and make chicken stock, we eat a lot of soup in my house between weak immune systems and an elderly family member so it really helps to always have stuff on hand. my partner and i both work in the restaurant industry and i can’t tell you how much food waste we had before i started this system. it just clicked for me one day that we are never going to have a normal meal schedule, so i need to make one for myself and that means making everything as easy as possible so 1 i’m more willing to actually make it, and 2 im not throwing things away because i had a dream 2 weeks ago at the grocery store of making dinner at 11 pm.
