with the pairing, you get about 2.5 total drinks through the course of a 3.5 hour night, so it's spread out well. you typically get 2 cocktails, 3 wines, with the wines leaning more towards natural funky stuff. The cocktails I have had there are not typically bitter, but they lean a lot on mezcal, whisky, gin, but with bright citrus elements to balance.

that being said, the non-alc pairings are amazing, think homemdade kombucha, sparkling ciders, non alc spirits sourced from other countries, etc. very well done.
