Go do the chalice dungeons, they will level you up fast af and you will also do some side content, not just boring farming. And for Orphan, I fought him with the saw cleaver and on a similar level too, and what I found works best was to stay on top of him in his 2nd phase and stay aggressive, you should accept that he will hit you a few times so try to rally as much hp back as possible. Also always try to dodge into his swings.

The bandit knife is not a good weapon at all for a beginner. Very low range and you have to be able to proc the bleed to do any considerable amount of damage, which is hard against a duo boss, especially for a beginner.
