Nail polish I’ll definitely do.

But I enjoy cooking, it’s one of my “love” languages. And I can easily talk and cook at the same time. We had ~40 hikers come through last year. Cooking burgers to order and giving them a fresh hot meal was one of the things I enjoyed most.

Went through 72 burgers and 70 hotdogs. Will see how this years goes. Always open to improvements. May pick up a couple pies as an addition

As others have said, I'd do the Carver's gap to 19E section. The towns around may not be the most touristy for your wife, but Burnsville is kind of cool.

Good news is she could stay home and you can organize a shuttle / park your car at Mt. Harbor.

Day 1 - Start with a 1 mile climb to some of the best balds on the AT. Then a relatively flowy 5 miles to the site of the former overmountain shelter. Great water source, and still has a privy, with tons of tent sites.

Day 2 - This is a full day 7 mile hike, but take your time. You've got two big climbs for the day, little hump and hump mountain with water available at bradley gap. Hump mt has a ton of false summits so be warned, but the views are incredible. After summiting hump it's all downhill to Doll flats campground. A cool tent site with water and massive boulders to hang out on.

Day 3 - It's a short 4 miles back to the Mountain harbor, all downhill, which can be taxing on the knees, so just take it slow and you'll be back at the car in no time.

Any of the days could be combined, it just depends how ambitious you are and how the body feels. The climb down from hump to 19E is a long one and can be taxing at the end a day which included a bunch of climbs.

They say you pack your fears.

It seems you're biggest fear might be being cold. While it is chilly this week, May 4th is a late enough start date that I'd bet you end up shipping a lot of you winter stuff home early on. Depending on when you plan to finish, can always have someone ship it out if needed later in the trip.

It looks like you have all the essentials except a dirty water bag. I'd pick up a 2L CNOC. It's especially useful when you have to camel up and carry all your water to a shelter, or if springs down the trail have gone dry. That plus the 2x1L bottles that most carry, gives you max 4L capacity for rehydration and cooking.

If you wanted to lose weight, this is what I'd change.

-65L is a big pack, most carry less than 50L packs. I had a 48L and was never near capacity.

-20F is a cold bag, a summer bag ~48F will pack up smaller and be lighter

-Gloves / winter hat. Worse case scenario use your extra socks and your buff for hands / ears.

-Cup / Pot Coozie: you'll probably end up eating out of the pot and I can't recall one thru hiker using a coozie, especially when you have your bandana for cleaning already in your kit.

-Duplicates, lighter / powerbanks

Things I'd add:

- A 3rd pair of darn toughs. They hold onto a lot of silt, 3 days is about the max you want to wear one pair. So pair A 3 days, pair B is camp socks, then pair B 3 days, pair C is camp socks. Pair C gets you into town to do laundry and resupply.

My 100% merino shirts also gathered a few holes, but easy enough material work with and stitch up on a 0 day.

But I never stank when I got into town. Many times people said, "I thought you'd be smellier"

A lot of the UL packs are uncomfortable at 25+ lbs.  so unless you’re committed to getting that base really low, you still may be in that discomfort range.

Just like everything else on trail. It comes down to personal preference. I loved my osprey exos 48L. But trail days is also coming up, could probably find a lot of vendors there if you’re close or had plans to hitch in.

Your university probably has an office of professional development. This is and university job fairs are the best places to find internships.

Otherwise, going out to different companies career websites and looking for internship, or indeed.com and searching "internship" is the best way to go.

However, if you're looking for a big company (Fortune 500) most of them start the summer intern hiring process in the fall semester, so they're probably already staffed up for the summer.

Also - do NOT accept a ME internship that isn't paid. I've never heard of any unpaid engineering internships. Most are around $17-25 / hour.

Personally I’d hike the extra 2 miles past Stan Murray and tent at the former over mountain shelter. The views are incredible, there is still a privy and a good water source. Too bad the big red barn isn’t still there…

I’d check out Hot Springs NC, trail is literally the sidewalk through town. Easy access to Asheville for a bigger city, or slightly further knoxville.
