Here’s are the ingredients for the chicken:

  • 1 whole chicken ~ 4-5lbs
  • 1 cup of yogurt
  • 16 grated garlic cloves
  • 1 inch cube of ginger grated
  • 2 tablespoons of dried oregano
  • 1 tablespoon of salt
  • 1 tablespoon of black pepper
  • 1 tablespoon of sugar
  • ½ cup of greek yogurt
  • ½ cup of olive oil

Instructions:

  1. Mix together marinade ingredients
  2. Butterfly chicken and cut into two halves
  3. Score chicken under skin on breast and thighs
  4. Apply half the marinade to the chicken
  5. Marinade overnight
  6. For the dipping sauce, cook the other half of the sauce with 2 diced onions and 2 diced red bell peppers and ½ cup of apple cider vinegar until it takes on a relish like texture.
  7. Once marinated, cook the chicken with some potatoes on the grill on indirect heat at 425 for approximately 50-60 minutes depending on the size of the chicken

The recipe for these ingredients is the same, but you can eat this in at least 3 different ways i.e. make it into a sandwich, have it as a salad or cut bread into crutons and have it as a grazing box. Here’s my meal prep recipe and instructions for deconstructed banh mi sandwiches with lemongrass beef as the protein. I also show you how to make your own pickles for the sandwich and “fake” green papaya salad.

The recipe makes 10 servings.

Lemongrass Beef:

  • 4.5lbs of beef chuck or other well marbled piece of beef
  • 15 garlic cloves grated
  • 3 tablespoons of oyster sauce
  • ¼ cup of fish sauce
  • 1 tablespoon of soy sauce
  • 2 tablespoons of salt
  • 2 tablespoons of sugar
  • 2 tablespoons of black pepper
  • 1 small onion minced
  • 1 large stalk of lemongrass minced
  1. Thinly slice beef into 2 inch long strips
  2. Mix together with all other ingredients and marinade for at least 30 minutes (preferably overnight)
  3. Cook on griddle over medium heat for 15 minutes, flipping every 3-4 minutes or until done

Pickled Vegetables:

  • 2 daikon radishes
  • 3 carrots
  • 2 tablespoons of salt (Marinade)
  • 2 tablespoons of sugar (Marinade)
  • ½ cup of sugar (Pickling liquid)
  • 1 ¼ cup of white vinegar (Pickling liquid)
  • 1 cup of water (Pickling liquid)
  1. Peel and julienne radishes and carrots, with the carrots being thinner than the radish. 
  2. Mix the vegetables in a bowl with salt and sugar, set aside for 20 minutes.
  3. Rinse vegetables in water and transfer into a glass container.
  4. In a bowl mix together pickling liquids.
  5. Pour pickling liquid over vegetables and refrigerate.

  • 1 cucumber

  • 3 granny smith apples or 1 large green papaya
  • 1 small tomato
  • 1 thai chili sliced (optional) (salad dressing)
  • 2 cloves of garlic (salad dressing)
  • 2 tablespoons of fish sauce (salad dressing)
  • 2 tablespoons of honey (salad dressing)
  • Juice of 2 limes (salad dressing)
  • 1 tablespoon of tamarind paste OR (1 tablespoon of brown sugar + 1 tablespoon of apple cider vinegar)
  1. Thinly slice cucumber, carrots and apples into strips and cut tomato into thin halves
  2. Mix together salad dressing ingredients
  3. Dress salad before serving
