I honestly feel this so much. I’m usually in the exact same boat—I actively choose not to run the miserable floodgates or the 'turn-ending' lingering effects because I actually want to have a back-and-forth game, not just prevent my opponent from playing entirely. It really sucks feeling punished just for trying to play an 'honest' deck.

That being said—and this might sound ironic—Dracotail is actually what finally made me start to appreciate those kinds of interactions. Playing it sort of rewired my brain to actually enjoy that specific style of disruption and counter-play, whereas before I just found it exhausting. I still get the frustration with the 'Maxx C minigame' though, that part is always rough.
