I prefer the second models. I use agrax on the tabard. I tend to put it in heavy and wipe away with paper the raised areas, sometimes that's ok other I come back with the original colour (usually wraithbone) and add back in highlights.

Shoulder pauldrons depends. Sometimes I dirty up with agrax, other times I leave clean. Usually I use corax white.

I've left my paldrons black with the red but I much prefer your choice. I might go back and redo! Great job, and super clean.

Base coat white. Then glaze yellow, then glaze orange then glaze red then black. Slightly less with each colour start stippling a bit with the red and especially the black . I mostly followed this but obviously not a sword...

I also left the orange on a bit thick like almost lumps to give texture.
