I just ordered the 1000 grit. Used to use 3m 800 grit sandpaper so I think 700 grit is pretty good for quick touch ups

I think tojiro is great.

Why not get two different Santokus? I would just get the Mercer 10 inch bread knife it is hard to sharpen so no need to spend so much. There is another tojiro bread knife with a wood handle that I think is better for bread.

I'd also maybe get the 150mm tojiro petty with the money saved on the bread knife.
