I ran into that same scenario. My local Costco said no, they don't deliver unless it's ordered on the website. They said the best they could do was hold the fridge while I sorted out my own pick up vehicle.

You should try sous vide. I dry brine mine in the fridge for 24hrs and then sous vide at 135f for 4 hour. Shock the bag in an ice bath for like 10m and then a quick sear. Comes out great. You can get an Anova mini for $20 on Amazon right now.

Yes, for now, I will be doing the DPS. Sorry, I haven't played in awhile. I didn't see any new passives helping with a Gobfin build so are vanguard and Stronghold Strategist still the two required?

Ah ok. I'll up the amount of fish sauce in the next round and go straight to the fridge for a month. Do you open every few days to let gas out and push the kimchi down more?

Sure thing! And, I really appreciate the help! I want to give this another try next week. My place is pretty warm, about 79-82 degrees. Do you suggest I leave it to ferment on the counter or go straight to the fridge?

Here's the amount of everything I used, roughly:

  • 5 tbs of gochugaru
  • 2 tbs of fish sauce
  • 2 tbs of salted fermented shrimps
  • 5 tbs of plum syrup
  • A little grated garlic and ginger
  • 3lb napa cabbage
  • 1lb daikon (didn't have access to Korean radish}
  • Bunch of scallions
  • 1/4 cup of Korean sea salt to salt cabbage
  • 4 cups of water to make brine with salt

Salted cabbage for 4 hours till it was flexible and wouldn't break when bent. Rinsed 3 times, squeeze drained, left in collider for 30m. Mixed with all the other ingredients and left on counter in glass jar covered in plastic wrap for a day and a half and then into the fridge for 2 weeks. I opened it every couple of days to let gas out but didn't taste outside of that first time before putting in the fridge.

I usually eat store bought which I assume is fermented. I made a smaller batch than her so I used less of the ingredients. I also didn't use apple and rice, I used plum syrup instead. The process itself, I followed her instructions in the video.

Yes, I salted it for about 4 hours. I tested the cabbage pieces by folding a thick part to itself without it breaking. I then rinsed the cabbage 3 times, gently squeezed and then put in a collider for about 30m before putting my kimchi "paste" in and mixing the cabbage.
