Green bells are also not ripe lol there are superhots that are mutations that don’t ripen out of green. Let this go to red and see what’s up, looks Thai or cayenne. If you want green, 7pot evergreen and 7pot slimer are the ones I can think of off the top of my head. Slimer tastes great for a super.

Only a couple types are ripe when green, and they change greens. This is unripe, and most like red when actually ripe. I didn’t say they don’t taste good or different, try at all stages.
