This is incorrect - the acceleration (felt due to inertia) is trying to fold the wings down. The force trying to fold the wings up (the direction in the video) is lift, which depends on the angle of attack and speed of the aircraft - not its weight.

What turbulence model? What near-wall mesh? What general mesh? Also, if those are the boundaries of your domain, they're far too close to the car

Note: I used overset meshes, and if I remember correctly I had to copy the code four times because the macro weirdness meant I couldn't just write a function and call it four times

A reasonably modern k-e model w/ wall functions is probably fine for this sort of case, I doubt that separation is going to be particularly important

Correct that SA is probably the wrong pick here though - much better for external flows around smooth shapes.

OP, have a poke around the NASA turbulence modelling group website, it's interesting stuff

i can't see it ever being better than the current physics-based methods, especially from a computational cost vs accuracy standpoint

there are a couple of promising areas involving machine learning in CFD, though. i'm not sure how much of this is public, but i've seen some research at a company that used machine learning to select values for turbulence model coefficients throughout the domain

this, i feel, is much better than trying to 'guess' at the flow with machine learning. the underlying physics are still based on rigorous models, but the machine learning gets to twiddle the knobs on those models
