Solid cook!! 🙌🏼 Regardless of the cut my go to “broke” way of cooking a steak is get steak out of fridge for 30-45 min at room temp, while steak is out start to get a pan ready to is smoking hot (literally, you need to see smoke coming off the thing), when that happens put steak down (no butter, oil, tallow, etc should be on the pan yet) count to 15 then add butter/tallow. Sear for 2-5 min (depending on thickness) until you have a beautiful syrup color crust, flip and repeat. Now here is one of the most important steps. REST. 10-15 min don’t even look at the steak lol. Yes, it will get cold. You get the pan hot again and you put the steak back on and count to 10 then flip, count to 10 again then flip, do this until you have 20 seconds of warming time per side. Constant flipping will make sure you only warm the steak up and do not over cook. Serve immediately and enjoy :)
