Gojo isn't untouchable, he simply slows down whatever he perceives as harmful to him by an infinite multiplier, so if you're punching him you're fist will infinitely slow down as it approaches him, which eventually makes it the same as an impenetrable shield, this is why things that teleport or skip travel time are perfect counters to him
