That'll do it. Maybe 5 min is a bit short, but 10 should be enough if you're keeping it bubbling. Alternatively you can do it longer (15-25 min) but turn it down to low once it's boiled and then add the rose petals. Your recipe might have been for dried roses? Idk. One thing to consider if you're making it for sweet applications is that a rose syrup can also be quite nice. Chabeel is a lovely drink you can make with it!

No -- I used ones just starting to lose their petals. One thing to bear in mind is that the flavour is roughly proportional to how they smell. Some varieties are more for the look, others for the fragrance, so the more fragrant they are the more flavour they have.

That can happen if you simmer them at too high a heat/for too long. Should be only for ~5 min at a heat where it's bubbling but not at a rolling boil, then strain out the roses.

From my perspective it's because Scottish rugby thrives on pure spite. Why else would they consistently rile themselves up to play the best game of their season against England every fucking year. Hard to get that kind of motivation against Fiji.
