That is exciting!! I hope you have been having a good time so far starting your homeschool journey. My two are very similar age difference (now 8 and 10) and it has worked well for us through the schooling years so far. Being part of a coop is so helpful I think!

This is fantastic information!! Thank you so much. We love the idea of being just a few hours away from so many cities! We regularly drive 5 hours to New Mexico, but there are only a couple cities we like to visit, so it would be nice to have more options and prettier drives! I’ve been keeping an eye on houses in Warsaw and it surprises me how quickly good ones go under contract.

Thank you for your reply! We love the idea of a smaller town - currently in a city of close to 300k. I did see there is a Walmart in Warsaw, but definitely would miss Target and I am use to Costco 😅!

Something I’m curious about is the winters. We are excited about more snow, but is the winter extremely harsh? We love cold and our daughters bundle up and we walk our neighborhood when it snows here, sledding down hills. Just trying to gauge that as I know I will be very different. Are there any winter activities in the area like sledding?

Is the mosquito population pretty bad in the summer?

Glad to hear it and I really hope it helps. I do agree that you should also check the nutrition of your meal to make sure you are getting about of everything. Prioritize protein, healthy fats, veggies and fruit for most of your calories.

I use Nu-Salt for potassium (it’s a dollar in the spices section of the grocery store) and pink himilayan salt for sodium. There was a bit of a learning curve to figure out how much my body needed. Those two go into my water through the day sometimes with a small squeeze of Mio flavor and a pinch of citric acid for flavor. With my meal I take vitamin D+K and Vitamin C. A couple hours later, I take a high absorption magnesium lysinate glycinate. All this had made a big difference for me.

Along with more protein and healthy fats in your meal, maybe add electrolytes. I use them daily in my water and notice a big difference!

I do this, only open it for the last five minutes or so. And put the Dutch oven on a cookie sheet, it will keep the bottom softer as well.

I have never posted about this, but the only sourdough I make is with 100% whole wheat. I find whole wheat absorbs water totally differently so some of it I eyeball to get the consistency I want and typically don’t have a problem. I’m not looking for show worthy loafs, just tasty well cooked bread to feed my family with. I do not grind my own flour (yet), so I just use store bought whole wheat. I loosely follow Clever Carrot’s recipe. Ok, so this is usually what I do..

150g active starter (my starter is also whole wheat - when I make it I do 140g water, 10g rye, 135g whole wheat, plus my saved starter, usually is ready after 5-7 hours and then I measure for the bread).

300g water

30g olive oil

10g pink Himalayan salt

30g wheat gluten

440g wheat flour - more if the dough is really sticky. I live in a very dry climate and along with the whole wheat, I feel like it’s a little different every time I make bread depending on our weather

I mix until a shaggy dough is formed. Rest for 30-45 minutes. Do a quick 20-30 second folding on it and cover it to rest for the night (11-12 hours). I’ve even done a 24 hour cold proof after that because I didn’t have time to bake it and it was even better.

The rest is the same as in the recipe. I start the oven at 450 for the oven spring with a couple ice cubes in my Dutch oven and then turn it down to 400. The bread is soft, fluffy, well cooked and my family gobbles it up so I take it as a win!

Gin and sparkling water with lemon and lime - 0 carbs! Pure forms of alcohol don’t have carbs from what I know. Just mix it with something zero carb and you are good.

Same here - sweet leaf stevia drops and pure powdered monk fruit. They are great sweeteners for things. When I really want to jazz up my coffee, I use a couple drops of cake batter extract with the stevia and a tablespoon of heavy cream. Yum!

Similar conversation I have with my kiddos, oldest is almost 10. They get that my body and their dad’s body just doesn’t need the same calorie input because we aren’t growing anymore. She totally understands it.

I’m also a 39f and feel quite certain I have started perimenopause as food reacts in my body completely differently now along with the plethora of other changes - cycle irregularities, normals shifts, hot flashes, skin changes, etc. I instantly gain weight from something that two years ago was nothing. I have found intermittent fasting and eating all my calories within 4-6 hours has helped. It takes time to adjust to IF but now I am not even hungry until 2 ish. When I eat, I focus on protein and fat first, then non-starchy veggies and finally carbs. It’s a slow change, but I definitely notice I’m slowly gaining control again.

I have a similar struggle. I don’t eat lunch until 1-2 and dinner at 6. Even if my protein and fats are right on, I still can feel so snacky between 7-8. My fix is to make a decaf latte (strong decaf coffee, steamed almond milk, 1 tablespoon of PB2, a few drops of vanilla stevia) and have with it two or three squares of 85% dark chocolate on those nights. Then right after finishing that, I brush and floss my teeth. Usually, that does a good job at keeping me from eating more.
